It is the soundtrack from a new HTV and Goldcrest television series 'Robin Hood'. The series hits our screens in the New Year. After their guest spot on 'SBB' Gael-Linn Records issue a debut album from Mairead Nf Mhaonaigh and hubby Frankie Kennedy, the best of traditional sounds of course. All hit sounds we hope. CHART GUIDELINE: Chart compilers Gallup now state that any single offering a free gift or other merchandise will not be included in the chart. Things got so bad that one artist was offering a free video cassette with her single, while artists from the Nolans to Barry Manilow were fined or had their recordings removed from the charts for unfair offers in competition. OH MAMMA: . The Mama's Boys (or the McManus brothers), hope for great things with their new album 'Turn It Up'. Even the boys were offering a limited number of free T-shirt with the album. I only hope that the chart compilers don't hear about this and have both album and Mama's Boys removed from their chart compiling list. I feel the sleeve is the only exciting thing about the 'Turn It Up' album, the material average. 'I Will Love You All My Life' are sloppy to say the least, Advice on Preparing and Cooking Turkey Many food poisoning outbreaks associated with consumption of turkey meat occur because of defective handling procedures. To minimise the risk involved the following advice IS offered. Hand-Washing:When handling the turkey– both in its uncooked and cooked state - it is important to ensurP. that hands are washed. Surfaces and Equipment: Surfaces and equipment should be thoroughly clean at all stages of the preparation. carving etc. of turkey. FROZEN TURKEYS Thawing: Remove polythene wrapping from the turkey. Place frozen turkey in a cool well ventilated place. Allow to thaw out completely. Ensure that drip from the thawing bird does not come in contact with other foods. The following times are recommended for thawing frozen turkey. Weight 101bs. Time 24 hrs. approximately. Weight 151bs. Time 36- 48 hrs. approximately A large turkey can take approximately 72 hours to thaw out completely. The use of hot or cold water to speed up thawing is not recommended as this increases the possibility of contamination. After Thawing: Remove giblets from the body cavity. Wash and wipe turkey dry. The use of disposable kitchen towels is preferable for wiping turkey but if cloths must be used they should be sterilised, before and after use, by boiling or by using bleach solution. Where possible cook immediately the preparation is completed. PRE-COOKED STORAGE In exceptional cases where it is not possible to cook the bird immediately store in a refrigerator or other cool clean place. Ensure that it does not come in contact w ith other foods. Cooking: Preheat the oven to the required temperature. Cook for 20 minutes per lb. at 300°- 325°, gas mark 2- 3 (145°C). After Cooking: Where possible, serve the turkey when freshly cooked. Apart from the desirable quality of freshly cooked meat, the danger of food poisoning is significantly reduced by serving in such condition. AFTER COOKING STORAGE If turkey is not eaten immediately, cool rapidly in a well-ventilated room and refrigerate where possible. Cold Turkey: Only remove the cold turkey from storage when required for carving and serving. Return unused balance to storage immediately. Exercise strict care in handling, carving and plating. Gravy: Use hot gravy with hot meat but not with cold meat. Reheating: If reheating slices of cooked turkey, ensure that temperature is adequate, e.g. 212°F (100°C) for 3- 5 minutes. Note: The advice given above applies also in the preparation, use and storage ofall poultry and meats. (1) Remove wrapping, thaw completely. (2) Remove giblets. <'· >, <t!
